I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Basil-Tomato Salmon Steaks

Serves: 6



  Download this recipe.

1 tablespoon olive oil
4 salmon steaks
1/2 teaspoon salt
1/8 teaspoon pepper
1/3 cup fresh basil leaves, loosely packed
1 medium tomato, chopped
1/4 cup shredded mozzarella cheese


1. In a large nonstick skillet, heat oil over medium heat. Add the salmon steaks; cook for 3 minutes on each side or until fish flakes easily with a fork. Transfer to a broiler pan.

2. Sprinkle fish with salt and pepper. Cover with basil leaves. Top with tomato and cheese. Broil 6 inches from heat for 2 minutes or until the cheese is melted.
