Salad Dressing Envy

Hello,

Every Fall I go to a restaurant in Connecticut called the Hopkins Inn, New Preston, CT... I love their house salad dressing. I would love to replicate it at home as I live in Florida, and cannot buy it here. Is there any way I could have this recipe to serve my guests? On the label the ingredients are: Canola oil, mayonnaise, water, Olive oil, sauteed veggies, herbs, mustard, cider vinegar, balsamic vinegar, spices and seasoning products, pasteurized egg yolks, vegetable gum & garlic.

I don't know what sauteed veggies there could be in it or seasoning products...the rest I know, except where do you buy vegetable gum?

Hi Pat,

I think the sautéed veggies most often used in the dressing recipes I've seen include onions, garlic, and red and green peppers. Sometimes you might get tomatoes in there, but I don't think they are usually sautéed. "Seasoning products" is the secret herbs/spices/MSG, etc. that make it difficult to duplicate recipes.

Your best bet would be to ask the restaurant for the recipe. Sometimes, the chef is flattered and willingly shares. Vegetable gum is used to thicken. There are different types like xanthan, guar gum, pectin, etc. I've found thickeners in natural food stores.
