Blue Cheese Tenders

Serves: 4


        

  Download this recipe.

1 tablespoon vegetable oil
1 pound boneless skinless chicken breast halves
1 tablespoon lemon juice
1 clove garlic, finely chopped
1/3 cup blue cheese dressing
Hot cooked farfalle (bow-tie) pasta, if desired
Crumbled blue cheese, if desired


Heat oil in 10-inch skillet over medium-high heat. Cook chicken, lemon juice and garlic in oil 8 to 10 minutes, stirring occasionally, until chicken is no longer pink in center.

Stir in dressing. Cook 2 to 4 minutes, stirring frequently, until hot. Serve over farfalle. Sprinkle with blue cheese.

Betty's Tip
The combination of toasted walnuts and blue cheese is a marriage made in heaven. To toast walnuts, place them in an uncovered shallow pan and toast in a 350° oven about 10 minutes, stirring occasionally, until golden brown.
