I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Flan

3/4 cup sugar
3 eggs
3 eggs yolks
1 1/2 teaspoons vanilla extract
1 3-ounce package cream cheese
1 14-ounce can sweetened condensed milk
1 12-ounce can evaporated milk


Heat granulated sugar in a medium-size heavy skillet or saucepan over medium heat until sugar melts and caramelizes to a golden amber color. Watch very carefully that it doesn't become too dark. Once melted, quickly pour into pie dish and swirl onto sides and all over bottom. Mix all other ingredients together; do not over whip or mix. Add liquid to pie dish and place pie dish in a roasting pan. Fill roasting pan with water to come half way up the pie dish to make a water bath. Bake at 350° on middle rack for 60 minutes. Remove from oven and water bath; allow to cool then refrigerate. Invert to serve. Bueno.
