I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Broiled Cod

Serves: 4



  Download this recipe.

1 1/2 pounds fresh cod filets
3 tablespoons olive oil
2 tablespoons red wine vinegar
2 cloves garlic, thinly sliced
1 teaspoon dried oregano, crumbled
Salt and freshly ground black pepper
2 tablespoons chopped fresh flat-leaf parsley
1 lemon, cut into wedges


1 Preheat the broiler to high. Oil a baking pan large enough to hold the fish in a single layer. Place the fish in the pan.

2 Stir together the oil, vinegar, garlic, oregano, and salt and pepper to taste. Pour the mixture over the fish fillets. Sprinkle with half the parsley.

3 Broil the fish 8 to 10 minutes, depending on the thickness, or until just barely opaque when cut in the thickest part. Sprinkle with the remaining parsley. Serve hot, with lemon wedges.
