Mashed Potato Tips

The key to fluffy potatoes is to have ALL the moisture drained off. Leaving cooking water means starches that make the potatoes shiny, sticky, and NOT fluffy. Don’t leave out the other important part... they need to be HOT.
I find that heating my milk and butter in the microwave before adding it helps serve the mashed potatoes hot.
