Fruit to the Rescue!

It’s the tail-end of summer, and with fresh fruit goodness doth our cup overfloweth! We’ve found that some nights we’re just too tired to fix a real, full-blown meal. All we want is something filling yet healthy.

That’s when we dip into that overflowing cup. Fruit is the answer. It’s healthy, tasty, filling, easy to prepare, available, beautiful…we could go on. But what we’re driving at is fresh juices and smoothies. And every once in awhile we discover some amazing recipes. If you find yourself not wanting to fix an involved meal, opt for one of these suggestions:

”JUST FRUIT” SMOOTHIE!


5 persimmons, without skin and seeds
1 1/2 cups of orange juice
1 cup of frozen or fresh blueberries

Blend all ingredients and serve.

WATERMELON RAPTURE


8 – 10 watermelon triangles (depending on how much juice you want), seeds removed
1 C fresh berries

Cut melon into chunks and place in blender.
Blend on low to medium, tamping melon down ‘til it juices. Add berries.
Blend on high for about 1 minute or so—until all contents are thoroughly juiced.

APRICOT AND RASPBERRY SMOOTHIE


1 – 2 C of diced ripe apricots
1 – 2 C of ripe raspberries
2 C low-fat milk
1 tbsp honey
1 C Greek yoghurt
2 ice cubes

Add all the tasty ingredients into your blender, then blend for approx 30 seconds or until smooth. Put ice cubes in a tall glass, then pour the smoothie mixture over. Sit back and enjoy! Serves 2.

CANTALOPE DELIGHT


1/2 ripe cantaloupe, peeled, seeded, and cut into chunks
1 cup skim milk
1 cup vanilla fat-free yogurt
1 cup crushed ice
1 tablespoons sugar, or to taste

Combine all ingredients in a blender and process until smooth. Makes about 4 cups.
