Give-Aways

I have been wanting to join for months now. This is the birthday gift I requested from my husband. I can't wait to select my software title that comes with joining and am hoping to get more organizing tips from the weekly letters.

Who Said This Is Healthy,
It Tastes Too Good!

by Patty Liston

On Dr. Oz’s Real Age web-site, we learn how to shave years off of our life by doing all of the things we know we need to do—nothing new here. However, the ideas are great, the information is wonderful, and the recipes lead to good health. Try these out and see if you agree!

African Peanut Soup

This earthy soup is traditionally served during Kwaanza celebrations in the United States. Pantry items make it a snap to whip up on any night.

1 onion, chopped
1 teaspoon canola oil
1 teaspoon curry powder
1 10-ounce can condensed tomato soup
1 14-ounce can reduced-sodium chicken broth, or 1 3/4 cups water
2 tablespoons natural peanut butter
1 tablespoon chopped fresh cilantro
Salt and freshly ground pepper, to taste

1. Heat oil in a medium saucepan and sauté onion until softened, 3 to 5 minutes. Stir in curry powder and cook, stirring, for 1 minute more. Add condensed tomato soup and broth or water. Bring to a simmer. Whisk in peanut butter and cilantro. Season with salt and pepper. Serve hot.

Almond-Crusted Chicken Fingers

Rather than a heavy coating, these chicken fingers are lightly covered in a spicy ground almond and whole-wheat flour mixture that'll have the kids forgetting about fast food and begging for this dinnertime treat.

Canola oil cooking spray
1/2 cup sliced almonds
1/4 cup whole-wheat flour
1 1/2 teaspoons paprika
1/2 teaspoon garlic powder
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1 1/2 teaspoons extra-virgin olive oil
4 each egg whites (see Ingredient note)
1 pound chicken tenders

1. Preheat oven to 475°F. Set a wire rack on a foil-lined baking sheet and coat with cooking spray.
2. Place almonds, flour, paprika, garlic powder, dry mustard, salt and pepper in a food processor; process until the almonds are finely chopped and the paprika is mixed throughout, about 1 minute. With the motor running, drizzle in oil; process until combined. Transfer the mixture to a shallow dish.
3. Whisk egg whites in a second shallow dish. Add chicken tenders and turn to coat. Transfer each tender to the almond mixture; turn to coat evenly. (Discard any remaining egg white and almond mixture.) Place the tenders on the prepared rack and coat with cooking spray; turn and spray the other side.
4. Bake the chicken fingers until golden brown, crispy and no longer pink in the center, 20 to 25 minutes.
