I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Celery and Stuff

Serves: 4


        

  Download this recipe.

4 tablespoons cream cheese (2 oz.)
1 tablespoon preserves coarsely chopped toasted sunflower seeds, or coarsely chopped green olives
2 or 3 stalks celery


1. Place cream cheese in a small mixer bowl and wait about 30 minutes for cream cheese to soften. NOTE: Or remove cream cheese from wrapper and place in a small microwavable bowl. Microwave at 100% power (700 watts) for 10 seconds to soften.

2. When cream cheese is softened, add jam, sunflower seeds or olives. Turn electric mixer on to low speed and beat until blended.

3. Spoon mixture into center of celery stalks. Cut celery into 2 or 3 pieces.

NOTE: Celery can also be stuffed with the Cheese Log mixture peanut butter, peanut butter sprinkled with raisins, egg salad tuna salad or ham salad.
