I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Citrus Date Bars

Serves: 36


        

  Download this recipe.

1 1/4 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup butter or margarine
3/4 cup sugar
1 egg large
2 teaspoons orange rinds grated
1 8-ounce package dates chopped
1 cup pecans coarsely chopped
Orange Cream Cheese Icing (see below)


Preheat oven to 325°. Coat a 13 x 9 x 2-inch baking pan with non-stick spray.

In a small bowl, stir together flour, baking powder, and salt; set aside.

Melt butter in a large saucepan over low heat. Remove from heat. Stir in flour mixture, sugar, egg, orange rind, dates, and pecans, mixing well. Spread batter in pan.

Bake 25 to 30 minutes until lightly browned and edges begin to pull away from sides of pan. Cool pan on a wire rack.

Frost with Orange Cream Cheese Icing. Cut into bars with a sharp knife.

Cover and store in the refrigerator.

ORANGE CREAM CHEESE ICING: In a small bowl, stir 1 package (3 oz.) softened cream cheese, 1 cup sifted powdered sugar, and 1 teaspoon grated orange rind until well blended.
