Peach Burrito for Cinco de Mayo

A friend gave us this recipe when we were talking about needing something good to bring to a company Cinco de Mayo party. We’re told it comes from the cookbook Diabetic Dining on Fabulous Foods, by Marilyn Helton. Believe us, this really is a fabulous treat, and since Cinco de Mayo is fast approaching, we thought you’d like it too!

2 large peaches, thinly sliced
4 (8-inch) flour tortillas
2 Tbsp butter
Cinnamon to taste
2 Tbsp brown sugar
Whipping cream (optional)
Serves 4

Arrange peach slices in a row near center of tortilla. Fold burrito up from the bottom first, then in from each side, folding over the bottom fold, like a diaper. Make sure your tortillas are fresh and not too dry! Melt margarine in a chafing dish or skillet. Place filled tortillas in the dish and cook 4 to 5 minutes, until golden brown, turning once. Remove from heat and sprinkle with cinnamon and brown sugar. Can add dollops of slightly sweetened whipping cream for a real dash of decadence!
