Save precious oven space on Turkey Day by using your crock-pot to make the stuffing. Not only will your empty bird cook more quickly, your vegetarian friends will also be able to enjoy this delicious side dish.
1/2 cup chopped celery
1 onion, chopped
1/4 cup butter
6 cups dry bread crumbs
1 sweet potato, cooked, peeled, finely chopped
1/2 cup chicken broth
1/4 cup chopped toasted pecans
1/2 teaspoon poultry seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
Melt butter in skillet and cook celery and onion until tender, stirring frequently. Add remaining ingredients and toss gently to coat. Grease a 4-5 quart crock-pot and fill with stuffing, 3/4 full.
