Quick Bread and Muffin Mix
12 cups flour
6 cups sugar **
4 tablespoons baking powder
2 tablespoons baking soda
2 tablespoons salt
Mix flour, sugar, baking powder, baking soda, and salt until well combined. Store in an airtight container, label, and use within six months. Makes about 18 cups mix. **For variety, use 3 cups brown sugar and 3 cups white sugar.
To make a loaf of bread:
3 cups Quick Bread and Muffin Mix
1/2 cup vegetable oil
3-4 Tablespoons milk or juice, as needed
1 cup vegetable or fruit
Flavorings, Spices, and Nuts, as desired
In a medium bowl, place Quick Bread and Muffin Mix. Make a well in the center. Combine the wet ingredients in a separate bowl. Pour all at once into the dry ingredients, and stir just until moistened. Pour batter into greased loaf pans. Bake at 350 degrees for 50-60 minutes or until a toothpick comes out clean when inserted in center. Makes one 8 1/2 x 4 1/2" loaf or two 7-1/4 x 3-1/2" loaves.
For muffins, fill greased muffin tins 2/3 full with batter. Bake for 15-20 minutes or until tests done when poked in center.
