Crispy Crust Freezer Pizza

Makes 2 Pizza Crusts, Each Pizza Serves 4
It's True! You can make a crispy crust freezer pizza at home. The trick is to add the cheese first, then the toppings and then the sauce.


   Pizza Crust:
   2 cupss all-purpose flour
   2 teaspoons active dry yeast
   1 teaspoon sugar
   1 1/2 teaspoons sugar
   1/2 teaspoon salt
   3/4 cup warm water
   2 tablespoons olive oil
   
   To Build Each Pizza, You Will Need:
   12 ounces grated mozzarella cheese
   4 ounces pepperoni slices (or 1/2 lb of another meat)
   1/4 cup chopped and sauteed onions
   1 1/2 cups marinara sauce
   2 tablespoons grated parmesan cheese


For AUTOMATIC BREAD MACHINE, place ingredients in the following order: water, olive oil, flour, sugar, salt and yeast. Select Dough setting and press Start.

For FOOD PROCESSOR, dissolve yeast and sugar in warm water in a measuring cup; let stand until bubbly--about 10 minutes. Stir in olive oil and salt. Insert metal blade or plastic dough blade. Place flour in work bowl. With motor running, pour yeast mixture through the feed tube in a steady stream, as fast as the flour absorbs it. When the dough forms a ball, stop the machine. Process continuously for 45 seconds to knead. Shape the dough in a ball, and place in greased bowl; turn to grease top. Let rise in a warm place until doubled--about 1 to 1 1/2 hours.

Spray pizza pan with non-stick cooking spray or brush with olive oil. Gently stretch pizza crust to fit pan, forming raised edge at lip. Sprinkle crust with grated mozzarella cheese.

Put on pepperoni, onions and any other toppings of choice. Gently spread marinara sauce to cover cheese and toppings. Salt to taste.

Flash freeze pizza in pan. Once frozen wrap in heavy aluminum foil, label, and place it back in the freezer until ready to use.

To Prepare:
DO NOT THAW PIZZA. Heat oven to 400 degrees. Bake frozen pizza for 20-25 minutes, until crust is golden brown, sauce bubbles and cheese is melted.
