Pumpkin Chiffon Cheesecake

1 (8-ounce) package cream cheese softened
1 (10-ounce) can pumpkin puree
3 eggs
3/4 cup brown sugar
1/2 cup heavy cream
1 teaspoon cinnamon
1/2 teaspoon salt
1 graham cracker pie crust


1. Place all of the ingredients in large bowl and blend with a whisk or fork. (It can be a little lumpy.)
2. Pour the mixture in the pie crust. Bake in a preheated 350°F oven for 1 hour, or until the center of the pie is firm (and doesn’t jiggle when you shake it). Cool completely.
3. Cut into wedges and serve as is or topped with a generous helping of whipped cream.
