Parmesan Couscous

Serves: 4
Total Calories: 90


2 tablespoons minced parsley
2 cups water
2 tablespoons olive oil
1 1/2 cups couscous
1/4 cup grated Parmesan cheese


1. Mince the parsley.
2. Place the water in a pot and bring to a rolling boil over medium heat. Add the oil and couscous. Stir once and remove from the heat. Cover and let sit for 5 minutes, or until the liquid is absorbed and the couscous is tender.
3. Fluff the couscous with a fork, stir in the parsley and Parmesan, and serve hot.
