Sweet Potato-Raisin Cookies

Ingredients

1 cup raisins
1/4 cup butter or margarine
1 cup sweet potato, cooked and mashed
1 egg
1 teaspoon vanilla extract
2 cups whole wheat flour
1/4 teaspoon allspice
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 cup walnuts, chopped
1/2 cup unprocessed bran flakes

Directions:

1. Preheat oven to 350°F. Soak raisins in hot water to cover for 5 minutes, then drain.

2. Cream margarine, then add sweet potatoes, egg, and vanilla beat until creamy.

3. Mix flour, allspice, salt, nutmeg, baking soda, baking powder, and cinnamon. Add to creamed mixture and mix well.

4. Add raisins, nuts, and bran.

5. Drop onto cookie sheet that has been sprayed with nonstick cooking spray.

6. Bake for 12 minutes or until done.
