Granola Pancakes

Ingredients

2 eggs or 1 egg plus 2 egg whites
2 cups fat-free milk
2 tablespoons molasses
2 cups whole wheat flour
1/2 cup low-fat granola cereal
2 teaspoons baking powder

Directions:

1. Beat eggs in a large cup or bowl add milk and molasses and stir.

2. Combine flour, granola, and baking powder and add to liquid mixture, mixing lightly with a fork.

3. Coat skillet with nonstick cooking spray and heat over medium heat.

4. Drop pancake batter, using about 1/4 cup per pancake, onto skillet. Turn pancakes once. Cook until golden brown on both sides.
