Cheesy Grits

Ingredients

2 cups water
1/2 cup quick cooking grits
3/4 cup shredded reduced-fat Cheddar cheese
1 tablespoon reduced-fat margarine
2 tablespoons chopped green chilies or picante sauce
1 egg, separated
1/4 cup fat-free milk

Directions:

1. Preheat oven to 350°F.

2. Bring water to boil in heavy saucepan. Stir in grits. Return to a boil. Reduce heat, partially cover, and cook 5 minutes. Stir occasionally.

3. Add cheese, margarine, and chilies. Stir until cheese is melted.

4. Beat egg yolk with milk and stir into grits.

5. Whip egg white until stiff and fold into mixture.

6. Pour into 5- by 5-inch casserole dish that has been sprayed with nonstick cooking spray and bake for 1 hour. Let set 5 minutes before cutting.
