Broccoli Quiche

Ingredients

1 (10-ounce) package frozen cut broccoli
1/2 cup chopped green pepper
1/3 cup chopped onion
1 cup shredded Colby cheese
1 cup fat-free milk
1/2 cup biscuit mix
3 eggs or 1/4 cup egg substitute
1/4 teaspoon salt
1/4 teaspoon pepper

Directions:

1. Preheat oven to 375°F.

2. Cook broccoli according to package directions drain.

3. Place broccoli in 9-inch pie plate coated with nonstick cooking spray sprinkle with green pepper, onion, and cheese. Set aside.

4. Combine remaining ingredients in an electric blender blend 15 seconds or until smooth. Pour over broccoli mixture.

5. Bake for 25-30 minutes or until set. Let stand 5 minutes before serving.
