Apple-Raisin Muffins

Ingredients

2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
3 packets sugar substitute suitable for baking
1 egg, lightly beaten
3 tablespoons canola oil
1/2 cup fat-free milk
1 cup unsweetened applesauce
1/2 cup raisins, soaked in very hot water 15 minutes and drained

Directions:

1. Preheat oven to 400°F. Prepare 2 1/2-inch muffin tins by spraying with cooking spray.

2. Combine dry ingredients in mixing bowl and mix thoroughly.

3. Beat egg and whip in oil, milk, and applesauce.

4. Add liquid mixture to dry ingredients and mix until flour is moistened. Stir in raisins.

5. Fill muffin tins two-thirds full. Bake for 25 minutes. Remove muffins from tin immediately. Store muffins in freezer for later use.
