Angel Biscuits

Ingredients

1 package quick-rising yeast
2 tablespoons warm water
3 cups all-purpose white flour
2 cups all-purpose whole wheat flour
1 teaspoon baking soda
1 tablespoon baking powder
4 tablespoons sugar
2 teaspoons salt
1 cup shortening
2 cups reduced-fat buttermilk
melted butter to brush tops (optional)

Directions:

1. Preheat oven to 400°F.

2. Dissolve yeast in lukewarm water.

3. Sift flours, soda, baking powder, sugar, and salt into bowl. Cut in shortening.

4. Add buttermilk, then yeast mixture. Stir until all flour is dampened.

5. Knead on floured board for 1-2 minutes. Roll out to desired thickness and cut with biscuit cutter, or refrigerate dough in an airtight container and use as needed (dough will keep for several days).

6. If desired, brush with melted butter before or after baking on nonstick baking sheet. Bake about 12-15 minutes.
