Potage Parmentier (onion or leek and potatosoup)

Ingredients

4 cups potatoes peeled and sliced
3 cups yellow onions thinly sliced or leeks
2 quarts water
1 tablespoon salt
1/3 cup cream
1 tablespoon butter or margarine, softened
2 tablespoons parsley minced
1 tablespoon chives minced

Directions:

In saucepan simmer vegetables, water and salt together for 50 minutes. Can be made in pressure cooker for speedier results cook under 15 pounds pressure for 5 minutes, release pressure and simmer uncovered for 20 minutes. Use potato masher to mash vegetables, or use blender or food mill. Correct seasoning. Just before serving, reheat to simmer and remove from heat. Stir in the cream by spoonfuls and beat in the butter or margarine. Serve with a sprinkling of the minced parsley and chives over the top.
