Pepper Relish

Serves: 5

4 cups chopped green bell peppers
4 cups chopped sweet red peppers
4 cups chopped onions
4 cups chopped celery
1/4 cup salt
3 cups sugar
3 cups vinegar


Cover peppers, onions, and celery with boiling water. Drain after 5 minutes and add the rest of the ingredients. Boil rapidly for 10 minutes. Pour into sterilized jars and seal.
