2 1/2 pounds ground beef
1 large red bell pepper, diced
1 medium onion, diced
1 1/2 cups ketchup
2 tablespoons packed brown sugar
2 teaspoons chili powder, or more as needed
2 tablespoons white vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon salt salt
sliders sauce see below
1 (10-ounce) package finely shredded Colby Jack Cheese
2 tablespoons butter, softened - to use for individual sandwiches
chips or salad, for serving, if desired




Yield: 8 servings

Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.

Add in the red peppers and onions. Stir, and then add 1 cup water, the vinegar, and the ketchup. Stir it around to combine, and then add the brown sugar, chili powder add Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes. I added a little more water and simmered for an hour or more to make the ground beef more tender.

To make sliders -

Cut the Hawaiian Rolls in half and place the bottom layer in a 9 by 13 inch glass pan. Put sloppy joe mixture on the bottom half of the rolls. Top with Colby Jack Cheese and then with the top half of the rolls (line up rolls with the bottom layer). Baste the top of the rolls with the butter sauce. Cover with foil and bake for 20 minutes in a 350° oven. Uncover and bake 2 minutes more to brown the tops of the rolls.

Sauce
1 tablespoon Sesame Seeds or poppyseeds
1-1/2 tablespoon yellow mustard
1/2 cup butter, melted
1 tablespoon minced onion (I use dehydrated minced onion)
1/2 teaspoon worcestershire sauce


To serve individual sandwiches - use whatever buns you prefer and spread the buns with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.
