Yield: 12 muffins
Preheat the oven to 350°F.
Mash the kiwi and oatmeal into a smooth paste.
Add the oil, molasses, and gingerroot to the kiwi, and stir well.
Add the dry ingredients to the kiwi mixture, and mix well. Spoon into lightly oiled muffin tins, filling each until nearly full. Bake for 20 minutes.
Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
