I recently purchased your Cook'n Recipe Software and love it! I have tried several other cookbook programs but found them unsatisfactory.

Sautéed Apple and Pear Devastation

Consider doubling or tripling the recipe so you always have a ready supply of this delectable apple filling on hand. One taste of this apple smoothie and you’ll understand why.

   2 tablespoons (1/4 stick) unsalted butter
   1 cup peeled and cubed Golden Delicious apples
   1 cup peeled and cubed pears
   1/4 teaspoon ground cinnamon
   1/4 teaspoon ground nutmeg
   1/2 teaspoon pure vanilla extract
   1/4 cup apple juice
   3 tablespoons Applejack brandy or other apple brandy
   3/4 cup caramel or favorite vanilla ice cream

Line a baking sheet with freezer paper. Set aside.

Melt the butter in a medium sauté pan over medium heat. Swirl the pan to coat evenly. Add the apple, pear, cinnamon, and nutmeg and blend well. Cook for 10 to 12 minutes, or until the fruits are tender, stirring occasionally. Add the vanilla and blend well. Remove the pan from the heat and place it on a cooling rack. When the apple and pear mixture is cool, transfer it to the prepared baking sheet and freeze for 1 hour or more.

When you are ready to make the smoothie, place the apple juice, apple brandy, apple and pear mixture, and ice cream in a blender and mix by using the on/off pulse function until the ingredients are mostly blended. Continue mixing, gradually increasing the speed, until the mixture is smooth. Pour the smoothie into a glass and garnish with a Pear Chip (see Great Garnishes), if desired.
