Yummy Baked Apples

* "Even though these are usually served for dessert, they're great for breakfast with sausage and eggs." 1. Wash 2 medium cooking apples, such as Rome Beauty or Golden Delicious. Peel and cut in half lengthwise. With a small sharp knife or tip of a teaspoon, carefully scoop out the cores and remove the tough area around the stems. Place in a 9-inch glass pie plate with the rounded sides down so they look like bowls ready to be filled. Arrange halves around outer edge of pie plate with the same amount of space between them. 2. Sprinkle with ground cinnamon and ground nutmeg. Evenly pour over apples, 1/3 cup maple-flavored syrup. Cover pie plate with plastic wrap, folding one corner of wrap back so steam can escape while cooking. 3. Microwave at 100% power (700 watts) for 3 minutes. Turn pie plate one-fourth turn. Microwave 2 minutes longer or until apples are very soft when you stick in a fork.

4. Use hot pads and place pie plate directly on a wooden board or heatproof surface. Cover with foil and wait for 5 minutes. Then remove foil and plastic wrap.

5. Using a spoon and fork or a large serving spoon, lift each apple half and place in a small serving bowl with the rounded side down just like it was in the pie plate.

6. Fill the center of each apple with raisins (using 2 tablespoons total) and walnut or pecan pieces (using 2 tablespoons total).

Carefully tilt pie plate and spoon syrup over apples and filling.

7. Serve apples while they are warm or let them cool to room temperature. Serve with vanilla ice cream or half-and-half if you wish.
