_ pound ground turkey uncooked
___ cup crackers crumbs
_ tablespoons flour
_ teaspoon salt
___ teaspoon black pepper freshly ground
_ eggs
___ cup milk
_ tablespoons onions grated
_ cups turkey broth or chicken broth
_ carrots medium, sliced
_ potatoes new, medium, pared and diced
___ cup water
___ cup flour
_ tablespoons lemon juice fresh
Garnish:
_ tablespoons parsley chopped fresh
Combine turkey, cracker crumbs, 2 tablespoons flour, salt, pepper, eggs, milk, and onion. Shape into 36 walnut-size meatballs. In large kettle, bring broth to boil. Add meatballs and return to boil; cover, reduce heat, and simmer 10 minutes. Remove meatballs from broth and set aside. Add carrots and potatoes to broth; cook for 20 minutes. Blend water and 1/4 cup flour; add to broth, mix well, and cook 10 minutes. Add lemon juice and meatballs; cook until heated through.
