Orange Sauce

Serves: 3

   ___ cup sugar
   _ 1/2 teaspoons cornstarch
   ___ cup milk
   _ egg yolk large, beaten
   _ tablespoons butter or margarine
   _ tablespoons orange juice concentrate or 1 to 2 tablespoons bourbon whiskey
   1/2 teaspoon vanilla extract


* Cooking Time: 3 to 4 minutes Power: 100% (700 watts) 50% (350 watts) Standing Time: 2 to 3 minutes In a 4-cup microwavable measuring cup or bowl, stir sugar and cornstarch until blended. Stir in milk until smooth. Microwave, uncovered, at 100% power (700 watts) for 2 1/2 to 3 minutes or until mixture is boiling, thickened and glossy, stirring every minute.

Gradually stir about half of the mixture into egg yolk, then stir back into hot mixture and stir until blended. Microwave, uncovered, at 50% power (350 watts) for 45 to 60 seconds or until thickened (do not boil). Place butter in hot mixture and let stand for 2 to 3 minutes or until melted. Stir in orange juice or bourbon and vanilla until blended. Serve or place a piece of plastic wrap directly on surface of sauce until ready to serve.

Serve warm over bread pudding or sliced pound cake. Refrigerate any leftovers.
