Cooking Time: 9 to 11 minutes Power: 100% (700 watts)
_ slices bacon
___ cup water
___ cup cider vinegar
_ teaspoon mustard prepared
_ teaspoon worcestershire sauce
_ tablespoons sugar
_ tablespoon flour
___ teaspoon salt
_ egg beaten
_ cups mixed vegetable salad*
Place bacon in a 1-quart microwavable dish. Microwave, uncovered, at 100% power (700 watts) for 3 to 4 minutes or until browned. Transfer bacon to paper towels; set aside.
To bacon drippings, add water, vinegar, mustard and Worcestershire sauce and mix until blended. Microwave, uncovered, at 100% power for 2 1/2 to 3 minutes or until mixture boils.
In a small bowl, stir sugar, flour and salt until blended. Stirring constantly, gradually stir flour mixture into hot liquid until blended. Microwave, uncovered, at 100% power for 3 1/2 minutes or until thickened, stirring after 2 minutes. Quickly stir in egg. Egg will "cook" in hot liquid, forming thin strings.
Pour dressing over salad. Crumble bacon and sprinkle over the top. Serve immediately.
* A suggested mixed vegetable salad is a mixture of 3 cups torn spinach leaves, 2 cups shredded zucchini, 1 cup thinly sliced carrots, 1 small tomato, cut into wedges, and 1/4 cup finely chopped green onions. Makes 6 to 8 servings.
