Crisp Spinach Salad

   _ slices bacon cut into 1-inch pieces
   ___ pound spinach fresh, stemmed and torn into bite-size pieces
   _ eggs hard-cooked, chopped
   _ green onions sliced, including some tops
   ___ cup swiss cheese shredded natural
   ___ cup garlic croutons (optional)
   ___ cup mayonnaise real
   _ tablespoons plain yogurt
   _ tablespoons lemon juice fresh
   _ 1/2 teaspoons dijon style mustard
   ___ teaspoon nutmeg ground
   Salt and freshly ground pepper to taste


Fry bacon until crisp; drain and reserve fat. Keep prepared spinach at room temperature. In large bowl combine bacon, spinach, eggs, onion, Swiss cheese, and optional croutons. Blend mayonnaise, yogurt, lemon juice, mustard, nutmeg, salt, and pepper. Drizzle spinach mixture with 3 tablespoons reserved bacon fat; add mayonnaise mixture and toss to coat.
