2 tablespoons flour
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup milk
1 cup Swiss cheese, grated
4 egg yolks
4 egg whites

Melt butter in saucepan. Blend in flour, mustard, salt, and pepper. Add milk gradually; cook and stir until mixture thickens; simmer 1 minute. Add Swiss cheese; stir until it melts. Beat egg yolks and add. Beat egg whites until stiff; fold in. Pour mixture into top of double boiler; cover and cook over gently boiling water about 1 hour until inserted knife comes out clean.
