Spinach Soufflé |

2 1/2 cups cooked spinach, drained
1/4 cup butter or margarine
3 tablespoons onions, chopped
1/4 cup flour
1 teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon pepper
1 1/2 cups milk
3 egg yolks
2 tablespoons lemon juice

Chop spinach very fine; set aside. Melt butter in saucepan; add onion and cook until tender. Add flour, salt, nutmeg, and pepper; mix well. Add milk; cook until thick, stirring constantly. Beat egg yolks. Add a small amount of hot mixture to egg yolks; then add all to hot mixture. Add spinach and lemon juice; pour into buttered soufflé dish, set in pan of hot water. Bake at 375°F for 35 to 40 minutes. Serve with Cheese Sauce.
