Powdered sugar
1/4 cup butter or margarine
3 tablespoons flour
1 cup milk
4 egg yolks
1/2 cup sugar
1 tablespoon vanilla extract
4 egg whites

Butter a soufflé dish and sprinkle with powdered sugar. In a saucepan melt butter; stir in flour. Add milk gradually and stir until thick; remove from heat. Beat egg yolks, sugar, and vanilla until thick. Add white sauce to egg mixture. Whip egg whites until stiff and fold in carefully. Put mixture into prepared soufflé dish; set dish in pan of hot water. Bake at 400°F for 15 minutes; then at 375°F for 30 to 40 minutes.
