Peach Soufflé |

1/2 cup sugar
1 envelope unflavored gelatin
1/4 teaspoon nutmeg
1/8 teaspoon salt
1/2 cup water
4 egg yolks, beaten
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
Few drops almond extract
4 large, fresh peaches
4 egg whites
1/2 cup whipping cream

Combine sugar, gelatin, nutmeg, salt, and water; cook over low heat until gelatin dissolves, stirring constantly. Gradually stir beaten egg yolks into mixture. Add lemon juice; cook until thickened. Remove from heat; cool. Add vanilla and almond extract. Chop peaches finely in blender; add to mixture. Chill. Whip egg whites until stiff and fold in. Whip cream and fold in. Chill until firm and garnish with toasted almonds.
