1/2 cup butter or margarine
1/3 cup flour
1/2 teaspoon salt
1 cup milk
3 egg yolks
1 1/2 tablespoons lemon juice
1/2 cup dates, diced
3 egg whites
1/2 cup sugar
Serve with whipped cream

Melt butter in saucepan. Stir in flour and salt. Add milk; cook, stirring constantly. Cool. Beat egg yolks and lemon juice until light. Add dates. Beat egg whites and sugar until stiff; fold into soufflé. Pour into soufflé dish and bake at 325°F for 1 hour until firm. Serve with whipped cream.
