Cherry Soufflé |

2 envelopes unflavored gelatin
1/4 teaspoon salt
2/3 cup sugar
8 eggs, separated
1 cup milk
1/2 cup water
2/3 cup red maraschino cherries
1/2 cup orange juice
1/2 cup sugar
2 cups heavy cream
Garnish with maraschino cherries

Make a collar for a medium soufflé dish with aluminum foil; set aside. Mix unflavored gelatin, salt, and sugar, together in top of double boiler. Beat egg yolks until light and add. Gradually stir in milk and water; cook over hot water, stirring constantly for about 10 minutes. Blend together cherries and orange juice; add and mix well; chill until slightly thickened. Beat egg whites until stiff; then fold in sugar. Whip heavy cream and fold in. Pour into prepared soufflé dish and chill; remove collar and garnish with cherries.
