1 1/2 cups milk
1/4 cup butter or margarine
1/4 cup flour
1 teaspoon salt
1/2 pound sharp cheddar cheese, shredded
6 egg yolks
6 egg whites

Heat milk, don't scald. Melt butter in skillet; add flour, scalded milk, salt, and pepper; stir until smooth and thick. Blend in cheese. Beat egg yolks. Blend in a little hot cheese sauce to warm; then add balance of sauce; stir. Beat egg whites until stiff; fold in. Pour into ungreased 2-quart baking dish. Bake at 300°F for about 1-1/4 hour. DO NOT open oven while baking.
