Hungarian Noodles with Cabbage and Cottage Cheese

Ingredients

1 pound linguine, fettucine, or other long flat pasta
1 1/2 cups shredded cabbage
1 tablespoon olive oil
6 ounces cottage cheese
1/2 teaspoon cracked black pepper
salt to taste
1 tablespoon sweet Hungarian paprika

Directions:

1. Fill a large pot with water, and bring to a boil over high heat. Drop in the pasta, and cook according to package directions.

2. Combine the cabbage and olive oil in a large skillet, and cook uncovered over medium heat for about 10 minutes, or until the cabbage is soft and just beginning to brown. Add the cottage cheese, pepper, and salt to taste, and stir to mix.

3. Drain the pasta and transfer to a pre-warmed serving bowl. Add the cabbage mixture, and toss gently to combine. Sprinkle generously with paprika and serve immediately.
