1. Have butcher cut a pocket in the lamb for stuffing. Sprinkle the inside of the pocket with salt. Measure crumbs into a large bowl.
2. Heat margarine and cook onion in it until transparent. Combine onion, undrained mushrooms, parsley, salt and crumbs. Toss to blend.
3. Stuff crumb mixture into pocket in lamb. Close opening with skewers. Roast at 325°F for 1 1/2 hours. Serve, if desired, with carrots and onions roasted along with lamb.
