Steamed Tomatoes

Serves: 4
Total Calories: 60


1 pint grape or cherry tomatoes
2 tablespoons extra-virgin olive oil
6 basil leaves, stacked and cut into narrow strips


1 Rinse the tomatoes and pat dry. Cut them in half through the stem end. In a small saucepan, combine the tomatoes, oil, and salt. Cover the pan and place on low heat. Cook 10 minutes or until the tomatoes are just softened but still hold their shape.

2 Add the basil. Serve hot or at room temperature.
