Arrange potatoes in a greased 2-quart baking pan set aside. Melt butter in a saucepan over low heat add onion, salt, thyme and pepper, stirring until tender. Drizzle over potatoes cover and bake at 425 degrees for 45 minutes. Sprinkle with cheese and parsley bake, uncovered, for an additional 15 minutes.
