ITALIAN NIGHT
Mangia! (pronounced MON-ja). That's Italian for "Eat!" and that's what your family will love to do when you make an Italian meal together. Pasta is always popular in Italy but there are plenty of other options to try. Raise your glasses and toast each other with "salute" (pronounced sa-LOOT-eh) tonight.


   Cheesy Italian Ravioli
   
   Shake Salad
   ___ cup creamy Italian salad dressing
   ___ cup shredded cheddar cheese or pizza blend cheese
   ___ cup shredded carrots
   _ cups torn lettuce or salad greens
   
   Sesame Seed Fingers
   _ tablespoons butter
   _ slices whole wheat bread
   _ tablespoon sesame seeds or poppy seeds
   
   Brownie Pizza
   _ package fudge brownie mix
   _ can ready-to-spread frosting
   Candy sprinkles


For Cheesy Italian Ravioli

For Shake Salad
In a large resealable plastic food-storage bag, layer 1/2 cup creamy Italian dressing, 1/2 cup shredded Cheddar cheese or pizza blend cheese, 1/2 cup shredded carrots and 4 cups torn salad greens. Seal bag, and shake to toss salad.

For Sesame Seed Fingers
Set oven control to broil. Spread 3 tablespoons butter over 6 slices whole wheat bread; sprinkle with 1 tablespoon sesame seed or poppy seed. Cut each slice crosswise into 4 strips; place strips in broiler pan. Broil with tops 4 inches from heat 1 1/2 to 2 minutes or until edges of bread are brown.

For Brownie Pizza
Heat oven to 350°. Grease 12-inch pizza pan. Make 1 package (19.8 ounces) fudge brownie mix, using amounts of water, oil and eggs called for on package. Spread batter in pan. Bake 23 to 25 minutes or until toothpick inserted 2 inches from side of pan comes out clean or almost clean. Let cool 1 to 2 hours. Frost with frosting, and decorate with candy sprinkles or other colored candies. Cut in wedges.

SPUR THE KIDS' INTEREST IN ITALY and its regions. What are some of the cities in Italy? What's the capital? Have an atlas or travel guide handy to look up the answers.

READ AN ITALIAN STORYBOOK. There are some great kids' books that describe and picture various regions of Italy. After dinner, read "Strega Nona" by Tomie dePaola or "Angelo" by David Macaulay.
