Zucchini Sauté

Ingredients

1 tablespoon olive oil
1 medium red onion, chopped
3 medium zucchini (about 5 or 6-oz each), cut into rounds
1/4 teaspoon dried oregano
Fresh ground pepper

Directions:

1. In a large skillet over medium heat, heat oil. Add onion, and sauté until onion is translucent but not browned.

2. Add zucchini, cover, and simmer 3 to 4 minutes. Sprinkle with oregano and pepper, and serve hot.
