All taste-testers agreed this was a winning combination. Try it when you have an abundance of spinach in your garden or it is on special where you shop.
2 (10-ounce) boxes frozen or up to 2 pounds fresh spinach
2 tablespoons peanut oil
1 clove garlic, minced
1 small onion, sliced
2 slices fresh ginger root
8 ounces fresh mushrooms, sliced (optional)
1 tablespoon dry sherry or white wine (optional)
1 1/2 tablespoons lite soy sauce
1/2 teaspoon sugar
1. Wash and trim spinach. Cut or tear into strips (use kitchen shears).
2. Heat oil in large skillet with cover. Stir-fry for 3 minutes.
3. Add sherry, soy sauce, and sugar. Lower heat. Cover. Cook 3 minutes.
4. Serve immediately.
