Very-Low Calorie Tomato Dressing

Serves: 6

Serving Size: 1/4 cup


   1 (6-ounce) can tomato juice or V-8 juice
   1/4 cup vinegar
   2 tablespoons vegetable oil (olive oil gives a robust flavor)
   1 tablespoon lemon juice
   1 tablespoon Dijon style mustard
   1 tablespoon chopped fresh chives
   1 tablespoon minced fresh parsley
   1 large clove garlic, minced
   1/2 teaspoon dried or 1 Tbsp. fresh basil
   1/8 teaspoon cayenne pepper or to taste


1. Combine all ingredients in a jar. Shake well to blend.

2. Refrigerate. Shake before each use.
