Tortellini and Feta Cheese Salad*

Serving size: 1/2 cup

A little bit of this salad goes a long way-it’s packed with tortellini, walnuts, and feta cheese!


   1/4 cup olive oil
   1/4 cup white wine vinegar
   1/4 cup scallion
   3 cloves garlic, minced
   1 tablespoon dried basil
   1 teaspoon dried dill
   24 ounces frozen tortellini noodles, stuffed with cheese
   1 (8-ounce) can water-packed artichoke hearts, drained and quartered
   1/3 cup crumbled feta cheese
   1/4 cup chopped black olives
   1/4 cup chopped walnuts
   1 large tomato, quartered


1. In a small bowl, whisk together the oil and vinegar. Add scallions, cloves, basil, and dill; mix well.

2. Combine the remaining ingredients and pour the dressing on top. Refrigerate overnight or at least 2 to 3 hours. Serve.
