Sweet And Tangy Chicken

Ingredients

2 tablespoons sugar
2 tablespoons Dijon style mustard
1 1/2 tablespoons lite soy sauce
4 boneless, skinless chicken breast halves (4-oz each), rinsed and patted dry
1/4 cup water

Directions:

1. In a small bowl, combine sugar, mustard, and soy sauce. Stir to blend thoroughly.

2. Place chicken in a shallow bowl, such as a pie pan. Spoon two Tbsp of the mustard mixture evenly over chicken and turn several times to coat lightly. Let stand 15 minutes.

3. Heat a 12-inch nonstick skillet over medium-high heat. Add chicken and cook 6 minutes. Turn and cook 4 minutes longer or until no longer pink in center. Place chicken on clean plate and set aside.

4. Add reserved mustard mixture and water to the skillet, bring to a boil, and continue boiling 1 1/2 minutes or until sauce is thickened slightly, scraping the bottom of the skillet with a flat spatula. Spoon sauce over chicken to serve.
