1. Place one spinach leaf, smooth side down, on work surface and top with 1 strip of cheese and 1 of turkey. Spread 1/4 tsp mustard evenly over turkey. Top with 3 pepper strips, overlapping slightly, and then 1 1/2 tsp sprouts.
2. Bring sides of spinach to the center, overlapping slightly, forming a roll. Secure diagonally with a wooden toothpick and repeat.
Note: Be sure to line up the ingredients parallel to the center vein of the spinach. Otherwise, it will be difficult to roll and will not resemble a bundle of veggies.
